Tip style defines the surface area or shape of the thermocouple sensing tip, i.e. round tip (std), flat tip, drill point tip (118 deg), etc., which is determined by your application process. The type junction again is determined by the application, i.e., ungrounded for process noise isolation, longer life, whereas, in general a grounded junction provides a compromise between performance (fast response) and thermocouple life.
